Ingredients: For the cake:
- 4 cups flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 teaspoon kosher salt
- 3 cups sugar
- 1 cup 2% Greek yogurt
- 2/3 cup limoncello liquor
- 4 teaspoons lemon zest (from 4 lemons)
- 1/2 cup freshly squeezed lemon juice (from 4 lemons)
- 1 1/2 cups (3 sticks) unsalted butter, melted and slightly cooled
- 6 eggs, beaten and at room temperature
Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a large cake pan.
- In a spacious mixing bowl, whisk together the flour, baking powder, baking soda, and kosher salt.
- In another bowl, combine the sugar, Greek yogurt, limoncello liquor, lemon zest, lemon juice, melted butter, and beaten eggs. Mix thoroughly until all the ingredients are well incorporated.
- Gradually add the wet mixture to the dry ingredients, stirring gently until the batter is smooth and fully combined.
- Pour the batter into the prepared cake pan, spreading it evenly.
- Bake in the preheated oven for approximately 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
- Once the cake has cooled, you can frost it with your favorite lemon-flavored frosting or simply dust it with powdered sugar.
